Recipe (for 2-3 servings)
In a saucepan add for 4 cups of water, one cup of fava beans, salt and a whole pealed onion. After it starts boiling, remove the foam and simmer for 30'-45' over medium heat, until fava beans thicken and become a soft and velvet paste.
Put fava in a bowl, add olive oil and stir well. Fava is best served with onions and capers.
Fava beans with tomatoes and onions (fava pantremeni)
Fry slightly slices of onion in olive oil. Then add in the saurce pan the cooked fava beans, chopped tomatoes and salt. Stir well for 5' until the mixture becomes thick.
Enjoy it with other traditional Greek appetizers and white Santorini wine!
