Frumenty (sometimes frumentee,furmity,fromity, orfermenty) was a popular dish inWestern Europeanmedieval cuisine. It was made primarily from boiled, crackedwheat—hence its name, which derives from theLatinword frumentum, "grain". Different recipes addedmilk,eggsorbroth. Other recipes includealmonds,currants,sugar,saffronand orange flower water. Frumenty was served with meat as apottage, traditionally withvenisonor occasionallyporpoise(considered a "fish" and therefore appropriate forLent. It was also frequently used as asubtlety.
A dish made with boiled cracked wheat and soured milk was made in antiquityin Persia, and is still used, often as the basis for a soup, in Greece and Cyprus (astrahanas).
